French It Up! (The Cake That Is..)

Croquembouche. This is the new cake that is taking over the wedding scene. Now, many of you are asking, 'what on earth is she talking about??'. A croquembouche is a traditional wedding cake, made of choux buns which are stacked and then held together with spun sugar. The filling tends to be a vanilla pastry cream, but you can also have other flavours including chocolate, and even limoncello if wanted by the bride and groom. However, more modern times have given more options with decorations, such as chocolate, more caramel, flowers and other pieces.

This is a great idea if you don't want the traditional cake, but still want something sweet which is a focal point of the room for guests. You also (traditionally) get to cut it with a sword which makes it even more fun! The cake is also very stable, and if done by a professional, should potentially be more stable than a traditional English wedding cake. However, it doesn't cope well with damp, so if you are getting married in a marquee, I would advise getting the cake ceremony done as early as possible to have all photos of the cake at its best. This will also allow your caterer to  break it up for guests in plenty of time.
